Catapulting Toward Dairy Innovation

 

Tomorrow’s consumer market represents billions of dollars of unrealized potential for dairy products. To identify and activate growth opportunities for the dairy industry overall, the Innovation Center for U.S. Dairy assessed emerging trends that could impact dairy sales.


The face of the American consumer is changing. Fast-forwarding eight years into the future:

  • 75 percent of the population will be overweight.
  • 33 percent of the population will be over the age of 55.
  • 20 percent of the population will be Hispanic.


Dairy categories must move beyond meeting the most basic of consumer needs to consider aspirational dimensions, within the gratification, wellness, convenience and safety need states.

Based on this comprehensive assessment of the current and future state of the industry, 20 opportunity areas exist to frame and focus future dairy innovation.
