Beibei Zhou
As Director of Product Research at Dairy Management Inc. (DMI), Beibei Zhou supports dairy innovation research and commercialization efforts. Based onsite at the University of Minnesota, she collaborates closely with academic partners to advance dairy innovation from scientific research to commercialized products that benefit U.S. dairy farmers.
With extensive academic and professional experience across different dairy regions, including the Netherlands, New Zealand, Ireland, and the USA, she has developed a broad perspective on connecting academic research with consumer and industry needs. Her expertise in food texture, ingredient functionality and protein chemistry has contributed to a diverse range of products, from dairy powders to process cheese. She has a keen interest in exploring new food technologies and their potential to enhance the processing of innovative dairy products.
Beibei received her B.S. in Food Quality and Safety from China Agricultural University, her M.S. in Food Technology from Wageningen University, and her Ph.D. in Food Technology from Technical University of Berlin. Her Ph.D. research focused on the interfacial and emulsifying properties of whey protein for enhancing texture, stability and functionality of emulsion-based food products.
