Ingredients:

Dirty martini pasta with blue cheese ready to enjoy, served on a white plate placed on a marble table.

Directions:

  1. Sauté garlic in olive oil in a large skillet over medium heat. Add olives, lemon zest and vodka and cook, stirring frequently, until fragrant, 3 to 4 minutes, until reduced by about half.
  2. Add the pasta, Parmesan, cream and olive brine. Cook, tossing constantly until pasta is coated and sauce is emulsified, about 2 minutes.
  3. Stir in butter until butter is melted; season with salt. 
  4. Top with more Parmesan, parsley and blue cheese crumbles before serving.

Note:

Gin can be used in place of vodka for a slight juniper flavor in the sauce.
