Bubble tea originated in 1980s Taiwan, where Liu Han-Chieh, a tea shop owner, added tapioca balls, or boba, to give his refreshments extra appeal. It was a hit! The trend spread to other parts of Asia, and in the 1990s it gained a following in the United States.

Cheese tea is also traced to Taiwan, but in the 2010s it quickly gained global attention thanks to social media. People love the thick and creamy texture as well as the flavor versatility—taste it for yourself with this cheese foam boba that makes the most of strawberry green tea.

Boba Tea Ingredients

Fresh strawberry cheese boba tea with cheese foam, green tea, fresh strawberries, and ice on a small white plate.

Directions:

Cheese Foam Prep

1. Combine cream cheese, 1-2 tablespoons sugar (to taste), and salt; whisk together. Add milk and stir until fully combined. (If using block cream cheese, as opposed to whipped, this helps loosen it and incorporate it smoothly.)
2. In a separate bowl, whip the heavy whipping cream until medium peaks form.

Assembling The Boba Tea

1. Add whipped cream to the cream cheese mixture and combine. It should be a thick but pourable consistency. If it’s too thick, gradually mix in milk (1 tablespoon at a time) until it reaches the desired foamy consistency.
2. Start making your drink by muddling together strawberries and 1 tablespoon of sugar (to taste) in a cup.
3. Add your toppings, ice, and green tea. Stir to incorporate the strawberries with the green tea.
4. Top it off with the cheese foam as desired and garnish with boba pearls.
