Depending on where you live, the heat of summer may be setting in. What better reason to swap out your morning cup of joe for an iced treat? Instead of popping by the local coffee shop, give this homemade Vanilla Iced Mochaccino a try.

  • 2 cups strong brewed coffee
  • 1 cup whole milk
  • 1 tablespoon unsweetened
  • cocoa powder
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract

Combine the coffee, milk, cocoa powder, sugar, and vanilla extract in a small saucepan over medium heat. Bring to a simmer; simmer for 5 minutes. Let cool for 5 minutes.

Pour the coffee mixture over ice into two large cups with lids or into one large cocktail shaker. Shake well. (If using a cocktail shaker, pour into two ice‑filled 16-ounce glasses before serving.) Serve immediately.

Plus, it’s a breeze to make this recipe lactose intolerance friendly. Simply substitute the whole milk in the recipe for lactose-free cow’s milk. Other swaps? Make it with fat-free milk or provide a burst of flavor by using chocolate milk vs. white. Looking for more helpful cooking tips? Check out this post from our friend and dietitian Kim Kirchherr.
