This kind of yogurt parfait is made for the deconstructionists. Or the constructionists, depending on how you look at it. Either way, it lays the ingredients of a parfait bare for all to see and anyone to arrange. Therein lies the fun!
Between the yogurt, berries, walnuts and grains, you’ve got a medley of textures for even the pickiest of eaters to pick and choose from or combine. Throw in some baby carrots for that fresh crunch, and you’ve got a lunch to supply energy for the afternoon.
1 cup Greek yogurt, low-fat or fat-free
¼ cup fresh berries, such as strawberries and blueberries, rinsed and diced if desired
¼ cup crunchy cereal
1 ounce diced walnuts
6 baby carrots
1 serving low-fat or fat-free milk
1. Arrange Greek yogurt in one section of the bento box.
2. Arrange fresh berries, crunchy cereal, walnuts and baby carrots in separate sections of the bento box.
3. Don’t forget to include a spoon!
4. Serve with milk.
