Cottage Cheese Toast With Salmon, Cucumber and Dill

Morning routine in a bit of a rut? Change things up with this tasty twist on toast! Creamy cottage cheese toast topped with smoked salmon, cucumber and dill creates a classic flavor combination and nutritious jump-start to your day. Try your next toast with cottage cheese.

Cottage cheese is known for its small curds (which is separated from whey during cheesemaking) and slightly savory and creamy taste. Cottage cheese has less calcium than other cheeses because some of the calcium is removed when the whey is drained. But cottage cheese is still a good source of high-quality protein.

Cottage cheese is having a resurgence these days, making its way into more and more mini fridges on campus.


1 cup large or small curd cottage cheese (nutrition information uses 1% milkfat)     

4 slices multi-grain bread, toasted

Salt and pepper

12 thin slices seedless cucumber

8 ounces thinly sliced cold smoked salmon

1/4 cup finely chopped red onion, optional

4 teaspoons drained capers

Snipped fresh dill

2 small tomatoes, sliced


Spread 1/4 cup cottage cheese on each toast slice. Season with salt and pepper. Top with cucumber and salmon. Sprinkle with onion, if using, capers and dill. Serve with tomatoes.
